Portobello mushroom sandwiches

Ingredients: onion buns, 2 portobello mushroom caps, 1 red onion, 2 bell peppers (red), brown sugar, butter, teriyaki sauce.

Clean the portobello mushroom caps and chop off the stems. Put them in a container underside up and marinate with teriyaki sauce. Put the container in the refrigerator.

While the portobellos are marinating, chop the onion and bell peppers into medium/large chunks. Place them in a large pot with equal parts brown sugar and butter (I used about 1/4 cup of each). Cook the onions and bell peppers at medium heat, stirring often. Cook the veggies until they are caramelized. This will take about ten minutes.

Once the veggies are done, remove them from heat and put them in a container. Put the two portobello mushrooms in the veggie pot and cook them for about 5 minutes on each side. The teriyaki sauce will mix with the remnants of the caramelized vegetables, and it will be delicious, I promise.

Don’t make the same mistake I did by putting the portobello mushroom on the bun first. It was nearly impossible to place the peppers and onions on top of the mushroom. I melted some Provolone cheese on top of my sandwich. It was messy, but delicious! Keep some napkins handy.

Total cost: ~$7 (not sure because I bought other things at the grocery store and the receipt seems to have sprouted legs and ran away).
